The Beauty of the Bud

Bud break is an important development in the life cycle of a vintage.  Like so many other plants, buds mark the emergence of the new season and give us new colors and scents to enjoy and explore.  For those of us living in the UK, April 12th marks the next phase of release from lockdown and an opportunity to finally meet others and support our hospitality families.  Has there ever been a more significant metaphor than bud break in 2021?  I think not.  On the food and wine side we will start to transition to spring, to the pairings that support our local products such as wild garlic, asparagus, new potatoes, purple sprouting broccoli, radishes, watercress, samphire, spring onions, lamb, sea trout, crab, lobster, goats cheese.  The transition back to the table is a much needed one for so many, and whatever is on the wine list or menu, I am sure your support will be most appreciated.  Let us raise a glass to breaking bread and the buds of spring.
