This wine has a bracing framework of acidity, minerality, and citrus. Pear and apple broaden to tropical fruit and a layered texture. The fruit was picked and then pressed immediately at the winery. Primary fermentation and malolactic conversion occurred spontaneously in 50% stainless steel and 50% neutral French oak barrels. The wine rested on the lees for six months to build texture and flavor.

Description

Our Daughter, Daisy, has a ferocious passion for chickens. When she was five, her burgeoning flock escaped and overran the vineyard. This happy accident became a defining moment for our farming. We embraced the hens’ natural inclination to scratch out weeds and balance insect populations.

The fruit was picked and then pressed immediately at the winery. Primary fermentation and malolactic conversion occurred spontaneously in 50% stainless steel and 50% neutral French oak barrels. The wine rested on the lees for six months to build texture and flavor.

Antiquum Farm is a global thought and practice leader in the regenerative agriculture movement and the birthplace of the world’s most unique and ambitious wine farming system. We farm without fertilizers or outside influences. Sheep, chickens, geese, and pigs graze the vineyard, nourishing the wines in a system we call Grazing-Based Viticulture.
