Edaphos Alder Springs Vineyard Trousseau 2019
A textbook example of Trousseau at its finest — and one of the most characterful wines in the Edaphos lineup. Alder Springs Vineyard is a wild and remote site, and the local bear population is apparently as fond of the fruit as we are: in 2019, a whopping 1.33 tons made it to the winery.
Mixed aromas of sour red berries, pine resin, and an indescribable suggestion of salinity. At only 12% alcohol, it is assertive and vibrant on the palate, with the sourness of red fruit fully revealed and framed by sharp acidity and medium-dry tannins.
Fermented using carbonic maceration in a Concrete Egg — all 2,666 pounds bucketed in and sealed for one month without opening. Shovelled out, lightly pressed in a basket press, and the free run and press combined into neutral barrel and puncheon. Racked before bottling, unfined and unfiltered, with no sulphur used at any point in production.
