The Aviator is a tribute to the technical discipline and soaring beauty of flight — named in honour of the pilot father who shared the wonder of the natural world from high above a grass runway. It is also one of California’s rarest wines: sourced from a planting of less than one acre at the 18-acre Henry David Vineyard in Sonoma County’s Bennett Valley, believed to be only the third Aligoté planting in the state after Josh Jensen’s legendary Mt. Harlan Vineyard.
Bright pale yellow in the glass, with expressions of unripe fruits, sour apple, lemon blossom, and morning dew. Vibrant and energetic on the palate, with tingling lemony acidity and a fresh, lean texture that carries through to a clean, precise finish. A wine of remarkable rarity and delicacy.
Aged in neutral French oak.
