Cabernet Sauvignon, Beyond Napa Valley

Cabernet Sauvignon has long been synonymous with California wines.  The much maligned and yet loved Napa Valley Cabernet Sauvignon has set the benchmark for what fine wine means in the United States.  Often expensive, deliberately allocated and prone to over extraction, the diverse geographic expressions can get overlooked on the assumption that the style is one dimensional. Cabernet Sauvignon is far from one dimensional, it is much more complex and interesting across the American wine landscape.

• Most planted varietal in the world and found in most major regions
• Thick skins, higher tannins
• Slow to ripen but has deep, complex flesh
• Blackberry or cassis is a dominant taste and aroma trait
• Cooler climate works to highten an already naturally acidic variety
• Greener or younger grapes can be more vegetal, riper more Jammy
