Dunites Chêne Vineyards Blanc de Noirs 2019
Chêne Vineyard is a 7-acre site on a gentle hillside in the Edna Valley AVA, farmed biodynamically by Gina Giugni with a deep commitment to soil biodiversity and a healthy farm ecosystem. The soils are a mixture of sandy loam and tuff — remnants of the volcanic activity that shaped this ancient coastline some 25 million years ago.
Pinot Noir was hand-harvested early in the morning and gently pressed to avoid extracting colour or bitter phenols from the skins. The juice was transferred to neutral oak barrels for native yeast fermentation, then aged for 8 months before a secondary fermentation was induced in bottle using the Méthode Champenoise. After 11 months en tirage, the wine was riddled and disgorged, leaving a crystal-clear sparkling wine with the toasty, brioche-like aromatics that define this style. No dosage was added — brut nature.
